Restaurant Manager

Position Summary:

The Food & Beverage Manager is responsible for the operations of the
food and beverage department to include restaurant, café court, lounge, and catering of events
as well as event coordination. The Manager will report directly to the General Manager on a
daily basis. This position shall monitor and maintain Quality Control of all areas within the
department. The Manager will train an Assistant Manager. The Manager shall maintain
accurate records, to include but not limited too; State/Tribal licenses, Waste logs, Temp Logs,
Sales-Alcohol, Liquor, Cigarettes, Candy, Buffet, etc, Inventory, Ordering/Shipping/Receiving.
The Manager shall work directly with staff and staff scheduling. Accounting and Analytical
ability is required. Development of a Workforce by keen leadership.

Duties & Responsibilities:

  • Planning – Developing and implementing strategies
    • Developing menues, budgets, and strategic plans
    • Implementing an agreed upon plan
    • Oversite and follow through
  • Managing – Overseeing the day – to – day operations, including
    • Staff scheduling
    • Interviewing, assist hiring, evaluate, employee retention
    • Train and Develop a Team
    • Contract oversite and Contract Staff as needed
  • Coordinating – events, catering, marketing
    • Coordinate special and reserved events
    • Develop and Offer a competitive Catering Service
    • Market the F & B – work closely with marketing team
  • Providing a Service and Problem Solving
    • Provide an exceptional service by Quality Control
    • Problem Solving daily, weekly, monthly, annually
      • Projection of revenue
      • Reevaluating Schedules, Menus, Catering, etc.
  • Developing
    • Menus items
      • Cost analysis
      • Market analysis
      • Marketing/advertising

Qualifications

  • Exceptional verbal and written (Email, Word, Excel, Office) communication
  • Accounting and Analytical ability
  • POS expertise
  • Two or more years of experience in the restaurant industry
  • Culinary of Arts Degree/Cert preferred.  AA/Bach or higher considered
  • Excellent interpersonal communication skills.
  • Train the Trainer ability

  • Expert Excel, Power Point, Word, Publisher, Micros, and other point of sale computers.
  • Knowledge of basic First Aid and CPR training.
  • Have a basic understanding of Santee Dakota historical/ Contemporary history/ Culture that relates to the Ohiya Casino & Resort mission, purpose, and employment.
